If your favorite team is peanut butter and chocolate, these cookies are for you! These no-bake cookies are the best ones I have ever tasted! They're super easy to make and healthier than some versions. My dad even says they're better than my mom's regular ones. Shhhh! Don't tell. (Wink.)
I am not a huge fan of cooking or baking, so this is the perfect snack recipe for me. It includes a few simple ingredients that can be stirred together quickly. There's no need for an oven, and it tastes amazing! Even my picky kids like them. My mother-in-law calls it candy. I call them cookies. But when something tastes this good, it doesn't matter what you call it. So without further ado, here's the recipe.
Healthier No-bake Cookies
Ingredients
1 cup creamy peanut butter
1/2 cup coconut oil
6 tablespoons honey
2 tsp vanilla extract
5 tablespoons unsweetened cocoa powder
1/8 teaspoon salt
3 cups old fashioned oats
Instructions
Line baking sheet with parchment paper.
In saucepan over medium heat, melt peanut butter and coconut oil until smooth.
Remove from heat. Stir in honey and vanilla.
While still hot, stir in cocoa powder, salt, and oats until mixed well.
Drop spoonfuls of mixture onto pan.
Place pan in freezer or refrigerator to let cookies set.
